GRILLED ZUCCHINI ROLLS WITH WILD ROCKET

**Can use goats cheese, with 1/2 teaspoon of lemon juice as well

Ingredients
- 3 organic zucchini, sliced legnthways
- 1 tbs organic extra virgin olive oil
- 1/8 tsp salt
- Pinch freshly ground black pepper
- 1 cup sweet potato mash
- 1 tablespoon freshly minced organic parsley
- 1 organic red capsicum, sliced legnthways
- 2 cups organic wild rocket or baby spinach leaves
- 1/3 cup basil leaves
Directions

Brush the zucchini with olive oil, season with salt and pepper and grill for about 4 mins until tender.

Combine the sweet potato mash, with the parsley.

Place a spoonfull of sweet potato mash on a piece of zucchini about 2cm from the end, top with rocket or baby spinach, a couple of slices of red capsicum and top with some basil. Roll and place on a plate with the seam facing down.
