Roasted Tomatoes

“This is a great way to concentrate the flavors of the tomato, and if you want to blister the skin, broil for 3 minutes at the end.”

Ingredients

  • 12 plum tomatoes
  • 1 Tbs olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • Makes 12 tomatoes.

Directions

  1. Preheat the oven to 250 degrees.

  2. Place the tomatoes on a baking sheet and rub with oil. Sprinkle with the salt and pepper.

  3. Roast until the tomatoes are shriveled and slightly darkened, about 3 hours.

  4. Use immediately, or cover and refrigerate up to 4 days.
