Tiffany’s Quick Quiche: Spinach and Goat Cheese

Ingredients
- 4 large eggs
- 1 cup milk
- 1 1/3 cup grated cheese
- 1/2 small onion thinly sliced
- 1 clove garlic minced
- 1 cup fresh spinach (uncooked) chopped
- Olive oil
- Premade pie shell
- Salt and pepper to taste
Directions

Preheat oven to 375 degrees.

Into the pie shell place half of the grated cheese and put aside.

Sauté the onion in olive oil on medium/low heat until translucent and soft.

Add the garlic and sauté for one minute.

Add the spinach and sauté until wilted and place this mixture into pie shell, on top of the cheese.

In a mixing bowl beat together the eggs and milk. Add salt and pepper to taste (This depends largely on the type of cheese used, salty cheeses won’t need much added.)

Add the egg mixture to the pie shell and top with the remainder of the grated cheese.

Bake for 45 minutes or until a pick inserted in the center comes out clean. The top should be lightly browned. Let cool for at least 10 minutes.
