Steam Grouper Fillet 2

Ingredients

  • Grouper fillet - 300g
  • Ginger -cut into 2 .5 cm strips
  • 3 spring onion
  • 4 red chilli
  • 5 olive oil 1 tbsp
  • 6 garlic - chopped 1tsp
  • 7 shallot - chopped 1tsp
  • Seasoning
  • 1 Fish sauce 2 tbsp
  • 2 Water 1 tbsp
  • 2 sesame oil 1 tsp
  • 3 Brandy 2 tbsp

Directions

  1. Wash and dry fish , season with salt and pepper & place in a stainless steel plate for steaming

  2. Mix seasoning well and pour on the fish, put ginger strips and 1 stalk of spring onion on top of fish.

  3. Cut one chilli into strips and lay on fish

  4. Heat up non stick frying pan and add olive oil.

  5. While Olive Oil is hot, add garlic and shallot, stir fry till golden brown.

  6. Remove and set aside to pour over the cooked fish after steaming.

  7. Boil water in the steamer.

  8. When water is boiled, place the stainless steel plate with fish in the steamer.

  9. Cover and steam for 10 minutes till fish is cooked.

  10. When the fish is cooked, remove from the steamer and garnish with spring onion, red chilli and hot oil
