Chicken Pepperoni Marinara

Ingredients
- Cooking Spray
- 2-4 cloves of minced garlic
- 16 slices of pepperoni, coarsely chopped*
- 1/4 teaspoon of dried oregano
- 1 1/2 cups of lower-sodium marinara sauce
- 2 tablespoons of chopped fresh basil (or 1/2 tsp of dried)
- 2 teaspoons olive oil
- 1 1/2 pounds of chicken cutlets
- 1/4 teaspoon freshly ground black pepper
- 1 cup shredded part skim mozzarella cheese
Directions

Spray your crockpot with cooking spray and place breasts in the bottom. Sprinkle with pepper. (I used frozen breasts and it turned out fine.)

In a small saute pan, heat olive oil over medium-high heat, add garlic and saute for a minute. Add in chopped pepperoni and saute for another minute. Pour in marinara sauce and saute for 2 more minutes. Mix in oregano and basil.

ur sauce over the top of chicken and cook on high for 3-4 hours. (I cooked mine for 3.5 hours and it was perfect.)

During the last 5 minutes of cooking, sprinkle mozzarella cheese evenly over each breast, and recover until melted.

Serve alone, or on top of whole wheat spaghetti, with a huge, yummy salad.
