Emerill’s Baked Salmon

Ingredients
- 1 whole side of salmon, scaled, skinned, and de-pinboned
- 2 t kosher salt
- 1 t freshly ground white pepper
- 1 t coarsely chopped fresh rosemary leaves
- 1 lemon, very thinly sliced
- 8 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
Directions

Set oven temperature to 425*F.

Rinse salmon under cold water.

Pat dry.

Cut a piece of foil long and wide enough to encase salmon when folded over the center and folded up on the ends.

Position the foil on a large baking sheet.

Place salmon in middle, skin side down.

Drizzle with olive oil.

Sprinkle with salt, pepper, and rosemary

Place lemon slices , onion, and garlic slivers on salmon.

. Drizzle with olive oil again

. Fold edges of foil up and over salmon.

. Crimp foil to seal and create an airtight package.

. Bake for 15 minutes, or until just cooked through, but still moist.

. Serve immediately.

. Serve with oven baked green beans.
