Baked Risotto with Spinach & Parmesan

Ingredients

  • 1 Tbs olive oil
  • 1 cup finely chopped onion
  • l cup uncooked Arborio rice
  • 8 cups spinach leaves (about 4 oz.)
  • 2 cups chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese

Directions

  1. Heat oil in sauce pan; add onion; cook 4 min. or until tender. Add rice; stir well. Stir in broth, salt & pepper. Simmer 7 minute; add spinach and 1/4 cup parmesan cheese. Cover and bake at 400 for 15 min. Stir in remaining 1/4 cup cheese. Cover and bak 15 min. more or until liquid is absorbed.
