Black Bean Quinoa Salad

This salad is fast, yummy, and nutritious. Don’t leave out the jalapeno, it gives “a little something”!

Ingredients
- 1 mango, peeled and diced small
- 1 red bell pepper, seeded and diced small
- 1 cup thinly sliced scallions
- 1 cup chopped cilantro
- 1 Tbsp vegetable oil
- 2 Tbsp wine vinegar or balsamic vinegar
- 1/4 tsp salt
- 1/2 tsp freshly ground pepper
- 1 tsp italian salad dressing seasoning mixed with 2 tsp water
- 2 cups raw quinoa, cooled (about 3/4 c raw)
- 1 15-oz can black beans, rinsed and drained
- 1-2 finely diced jelapeno peppers, optional

Mix everything together and serve over greens
