Bruschetta a Tono

Ingredients

  • One can of cannolini beans
  • 1 tsp capers
  • 1/4 cup finely diced red onion
  • Juice of two lemons
  • 2 cups of fresh tomatos chopped small with seeds removed
  • 1 flat can of tuna, oil or water (oil works best for flavor and consistency)
  • 1/4 tsp of dried Italian herbs
  • Pepper to taste
  • Olive oil, if needed
  • Sliced Italian bread lightly toasted

Directions

  1. Toast bread slices

  2. Drain and rinse cannolini beans

  3. Using a fork, mash cannoli beans, leaving some roughness for texture

  4. In mixing bowl combined cannolini beans, capers, onion lemon juice, herbs and pepper

  5. Mix throughly

  6. Add tomatos

  7. Add tuna breaking up into small pieces

  8. Mix thoroughly

  9. If concsitancy of mixture is not spreadable, add small amount of olive oil

  10. Place one tablespoon of mixture on each bread slice, or depending up size of bread slice
