Queso Fundido

Ingredients
- 1/2 of medium white onion, medium chop
- 1 cup chopped tomatos, seeded or not
- 1-1/2 cups rough copped mushrooms, button white are fine
- 1 small finely chopped jalapeno pepper, seeds removed
- 1 cup of medium dark beer
- 2 cups queso fresco, or to taste
- Salt and pepper
- 1 tbsp vegetable oil
Directions

In 12 ’ skillet

Add vegetable oil and mushrooms

Sautee for 2-3 minutes on medium heat, until mushrooms are releasing liquid

Add onion, tomato, and green chile, continue sauteeing for for 2-3 minutes

Salt and pepper

Add beer and cook until liquid in pan is reduced 50%

Cover mixture with desired thickness of cheese, cover skillet and continue on heat until cheese is melted.

Remove from and let sit for 5-7 minutes to firm up a bit.

Slide fundido from skillet onto a serving dish

Slice like a pie into desired pieces

Serve with toasted tortillas
