Down-Home Sweet Potato Pie

Ingredients

  • 2 cups cooked sweet potatoes (2 medium-large)
  • 1/4 cup butter or margarine
  • 1 cup sugar or 1 14-oz can sweetened condensed milk
  • 1 15-oz can evaporated milk
  • 1 egg
  • Spice mix #1 - 1/2 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp allspice, 1/4 tsp vanilla extract
  • Spice mix #2 - 1/2 tsp cinnamon, 1 tsp powdered ginger, 1/4 tsp allspice, 1/2 tsp vanilla extract

Directions

  1. Preheat oven to 375F.

  2. Blend the sweet potatoes until smooth.

  3. Add the butter and blend.

  4. Add the sugar or condensed milk and evaporated milk and blend well.

  5. Add the egg and spices (mix#1 or mix#2) and blend well.

  6. Pour into pre-baked pie shells (see: No Roll Pie Crust) and bake at 375F until a toothpick inserted in the center comes out clean — appx 45 minutes. Let cool on a rack.
