Beef Jerky

Ingredients

  • 400g skirting/flank steak
  • 1/4 cup soy sauce
  • 3/4 tablespoon lemon juice
  • 3/4 tablespoon onion granules
  • 1/2 tsp cayenne pepper
  • Few dashes Tabasco sauce
  • Fresh ground pepper
  • 2 tablespoons olive oil

Directions

  1. Slice as much fat off the meat as possible – it should be pretty lean anyway but you want it with no fat at all.

  2. Thinly slice the meat into similar size pieces and place in a mixing bowl.

  3. Add all the above ingredients to the meat and mix well.

  4. Leave to marinade overnight.

  5. Spread the meat on dehydrator trays and dehydrate on 160 until its dry

  6. I’ve heard you can do on a baking tray with greaseproof paper in the oven on the lowest temperature but not tried this.
