Ingredients
- 3/4 cup grated ginger
- 1/2 cup fresh lime juice
- 1/4 cup coconut sugar
- 2 tsp salt
- 1/4 cup whey
- 2 litres filtered water
Directions

Mix all ingredients in a large mason jar or halve the ingredients into 2 smaller jars – ensure there is an inch left at top.

Leave on the counter for 2 days to ferment then decant to bottles and refrigerate.

It will continue you ferment slightly in the fridge & will change flavour the longer it is left.
