Fermented Ginger Ale

Ingredients

  • 3/4 cup grated ginger
  • 1/2 cup fresh lime juice
  • 1/4 cup coconut sugar
  • 2 tsp salt
  • 1/4 cup whey
  • 2 litres filtered water

Directions

  1. Mix all ingredients in a large mason jar or halve the ingredients into 2 smaller jars – ensure there is an inch left at top.

  2. Leave on the counter for 2 days to ferment then decant to bottles and refrigerate.

  3. It will continue you ferment slightly in the fridge & will change flavour the longer it is left.
