Flourless Ginger Biscuits

Ingredients

  • 3/4 cups crispy almonds (see recipe)
  • 1/4 cup butter
  • 1/2 cup arrowroot powder
  • 1/4 cup coconut sugar/rapadura
  • /21 tbsp water
  • 3/4 tsp ginger
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/4 tsp salt

Directions

  1. Blend almonds to a fine flour like powder.

  2. Add rest of ingredients and mix until well combined.

  3. Divide into walnut size balls on a baking sheet lined with parchment paper.

  4. Bake for 5 mins then remove from oven and press down each ball into a biscuit shape. Return to oven for 10 mins (maybe less) – keep checking as they burn easily on bottom. Remove from oven and cool – will harden as they cool.
