Ingredients
- 2 litres filtered water
- Juice of 6-8 lemons/limes
- 1/2 cup whey (see recipe)
- 1/2 cup coconut sugar/rapadura
- 1/2 tsp nutmeg
Directions

Mix all ingredients in a large mason jar or halve the ingredients into 2 smaller jars – ensure there is an inch left at top.

Leave on the counter for 2 days to ferment then decant to bottles and refrigerate.

It will continue you ferment slightly in the fridge & will change flavour the longer it is left.
