Beef Stroganoff

Ingredients

  • 500g stewing beef, diced into small chunks
  • 300ml creme fraiche
  • 2 onions
  • 6 mushrooms, chopped
  • 250ml red wine
  • 1/2 cup beef or chicken stock
  • paprika
  • salt & pepper

Directions

  1. Finely chop one onion & fry with the beef until browned.

  2. Remove from heat & season with salt, pepper & paprika.

  3. Heat the wine & stock in a saucepan until simmering.

  4. Add beef mixture & simmer covered for 1 1/4 hrs on a low heat adding more water of it drys out – need to check it regularly as it has a tendency to do so.

  5. Add mushrooms & simmer for a further 1/2 hr.

  6. Chop the remaining onion into large pieces and add to the pan.

  7. Cook for 5 mins until onion is just soft.

  8. Remove from heat and add creme fraiche.

  9. Return to the heat & warm through but do not let it boil.

  10. Season with salt, pepper & more paprika if desired.
