Mushroom Soup

Ingredients

  • 3 tblsp butter
  • 1 onion, diced
  • 225g mushrooms, diced
  • 3/4 tblsp arrowroot powder
  • 600ml chicken stock
  • 150ml cream (or milk)
  • salt & pepper

Directions

  1. Heat the butter in a large pan & fry onion until soft.

  2. Add the mushrooms & saute for 5 mins.

  3. Stir in arrowroot powder & cook for 2 mins

  4. Allow to cool slightly then add stock & cream gradually.

  5. Bring to the boil, stiring constantly.

  6. Season well, cover & simmer for about 20mins.

  7. Serve with a sprinkling of chopped parsley
