Ingredients
- 3 tblsp butter
- 1 onion, diced
- 225g mushrooms, diced
- 3/4 tblsp arrowroot powder
- 600ml chicken stock
- 150ml cream (or milk)
- salt & pepper
Directions

Heat the butter in a large pan & fry onion until soft.

Add the mushrooms & saute for 5 mins.

Stir in arrowroot powder & cook for 2 mins

Allow to cool slightly then add stock & cream gradually.

Bring to the boil, stiring constantly.

Season well, cover & simmer for about 20mins.

Serve with a sprinkling of chopped parsley
