Leek & Potato Soup

Ingredients

  • 3 tblsp butter
  • 450g leeks, quartered lengthways then finely sliced
  • 1 onion, diced
  • 2 medium potato, peeled & cubed (can omit if being paleo)
  • 1 litre chicken stock
  • salt & pepper
  • cream (can omit)
  • can add bacon for extra flavour

Directions

  1. Heat the butter in a large pan then fry the onion (and bacon) for 2 mins.

  2. Add leeks & potatoes & fry for 3 mins.

  3. Add stock & bring to the boil.

  4. Simmer for about 30mins until potatoes are soft.

  5. Allow to cool slightly then remove half the soup and blend until smooth and return to the pan.

  6. Add cream if desired, reheat & season to taste.
