Ingredients
- 2 medium onions, diced
- 3 tblsp butter
- 1 litre chicken stock
- 2 potatoes, peeled & diced
- 2 bunches of watercress
- sea salt
- cream or creme fraiche
Directions

Heat butter in saucepan and fry onion until soft.

Add potatoes & cook for a few minutes.

Add the stock, bring to the boil & simmer for about 30 mins.

Add watercress and wilt for about 5mins.

Remove from heat and cool slightly.

Blend until smooth & add cream and season to taste.
