Bolognaise Sauce

Ingredients

  • 400g beef mince
  • 2 onions, finely chopped
  • 2 peppers, finely chopped
  • 2 cloves garlic, finely chopped
  • handful chopped basil leaves
  • 1 tblsp dried oregano
  • 1 jar passata
  • tomato puree
  • Optional: 6 finely chopped mushrooms, 1 grated carrot (for sweetness), beef stock (for nutrients)

Directions

  1. Heat dripping/lard in casserole pot on stove top on a medium heat.

  2. Fry beef & garlic until starting to brown.

  3. Add pepper & onions (& mushrooms) & fry until cooked.

  4. Add oregano & tomato purée & mix well.

  5. Cook for a few mins stiring continuously.

  6. Add passata (& beef stock) & season with salt & pepper.

  7. Add basil (& grated carrot)

  8. Cook for 20-30 mins until reduced – stiring occasionally to prevent sticking.

  9. Add more herbs/salt/pepper if necessary.
