Ingredients
- 3 pieces of fish - white fish & salmon a good combination. A bit of smoked fish gives good flavour.
- 2 large onions
- Handful fresh or frozen peas
- 300ml milk
- 1 tblsp arrowroot powder
- 2 tblsp butter
- Bunch of parsley, finely chopped
- 6-8 medium potatoes, peeled & chopped
- milk & butter for mashing
- Optional: 6 chopped mushrooms, 2 or 3 chopped hard boiled eggs, prawns, spianch
Directions

Boil potatoes until cooked then mash well with milk & butter – can add parsley or some fried onion to the mash.

Whisk mash with a wooden spoon until smooth & season with salt & pepper.

Poach the fish in a large pan with milk until cooked through.

Flake the fish and place into a pie/casserole dish reserving the milk for the sauce – you may need to top up with fresh milk if a lot evaporated during cooking.

Fry the onions, peas (& mushrooms) until soft & add to the pie dish.

Add eggs/spinach/extra cooked veg to dish.

In a saucepan melt the butter, remove from heat & stir in arrowroot powder until dough like.

Return to heat & cook for about 1 min.

Remove from heat and stir in a little milk to make a smooth paste.

Gradually add the rest of the milk & stir/whisk gently into a smooth sauce.

Return to heat & stir continuously until sauce is thickened – you must stir or else the sauce will become lumpy.

Season the sauce to taste & add parsley.

Pour the sauce over the pie mixture & stir to combine.

Top with mashed potato & bake in the oven for 20-30 mins until golden.

Can serve just the pie mixture with vegetables if not eating potatoes.
