Ingredients
- 1/2 cup fat-free plain yogurt
- 1/2 cup fat-free mayonnaise
- 3 tablespoons finely chopped onions
- 1 teaspoon ginger
- 1 teaspoon curry powder
- 1 pound boneless, skinless chicken breast, cut into 1/2" strips
- 1 teaspoon paprika
- 1/2 teaspoon ground black pepper
- 2 cups cooked brown rice

In a small bowl, mix the yogurt, mayonnaise, onion, ginger, and curry powder

Place the chicken in a medium bowl. Sprinkle with the paprika and pepper. Toss until coated

In a nonstick skillet over medium heat, cook the chicken for 4 to 5 minutes. Stir in the yogurt mixture. Cook, stirring for 2 minutes. Serve over the rice.
