Ingredients
- 4 cups of blanched and peeled edamame
- 1 small red onion diced fine
- 1 cup diced roasted red pepper
- 1 cup diced yellow pepper
- 1 tsp. lime juice
- 1 jalapeno minced fine
- 1 tsp. extra virgin olive oil
- 1 tbsp chopped fresh cilantro
- 1 tbsp chopped fresh parsley
- Salt and pepper
Directions

Puree three cups of edamame with 1/2 cup of extra virgin olive oil.

Roughly chop the remaining cup and combine with the rest of the ingredients.

Puree all together and serve.
