Kale Avocado Salad

A wonderful raw salad full of Omega 3’s and antioxidants! Great Taste, too!

Prep time: 20 minutes
Serves 4 people

Ingredients

  • 1 bunch of Kale (about 4 cups)
  • 1-2 Avocados
  • 1 cup marinated sliced onions
  • 1/2 cup vinegar
  • 2 limes
  • 1 cup green olives stuffed with garlic, chopped finely.
  • 1 -2 cups of grated carrots
  • salt and pepper

Directions

  1. Marinate the onions in the vinegar for about 30 minutes before preparing salad.

  2. Wash and take the leaves off the tougher part of the kale leaf. Place washed leaves on cutting board and squeeze 1 lime over them and cut them to bite size pieces.

  3. Add the marinated onions, olives with garlic, carrots and mix well to combine.

  4. Add the avocado by spoon it into the mixture, squeezing the remaining lime on it and with your hands mash the avocado into the mixture and combine well. Season with salt and pepper.
