Ingredients
- Any mix of the below:
- 1/3 C fennel (finely chopped)
- 3 stalks celery (finely sliced)
- 5 stalks asparagus (cut into 1" pieces)
- 2 tomatoes (diced) or cherry tomatoes (sliced)
- 1 red bell pepper (cut into fine slivers)
- 1/3 C broccoli (finely chopped)
- 1/3 C fresh basil (finely chopped)
- 1/3 C parsley (finely chopped)
- Sauce:
- 1 tomato (or a big handful of cherry tomatoes)
- 1/8 C olive oil
- 1/4 C water
- 2 T lemon juice
- 1 T fresh ginger
- 2 t black paper
- 1 t oregano
Directions

Mix veggies in casserole dish.

Blend sauce and pour over veggies. Mix.

Put casserole in deydrater. 145oF for 1-2 hours.

Serve over zucchini pasta (optional) or as is.
