Pea and Ham Hock Soup

Ingredients

  • 1 Ham Hock
  • 200/250g (depending on taste) peas fresh or frozen
  • 1 onion
  • 1 carrot
  • 1 leek
  • butter
  • Pepper

Directions

  1. Soften chopped onion, carrot and leek with butter in large pan.

  2. Add ham and cover with water. Make sure to skim off froth (there will probably be alot).

  3. Simmer till ham is cooked (approx 2 hrs, you can cut in to ham to check it).

  4. Remove ham when ready and add peas.

  5. Cook till soft then blend. Season with pepper.

  6. Add some shredded ham when serving.

  7. Optional; herbs, parsley, mint or coriander. Cream/sour cream/creme fresh etc

  8. Many people say soak the ham over night, but this is to decrease salt content and not really necessary.
