Mexican Stir-Fry Squash over Rice

For a meat dish add 1 pound of cut up beef or chicken.
Prep time: 5 minutes
Cook time: 15 minutes
Serves 5 people

Ingredients
- 3 tablespoons olive oil
- 4 cut-up squash or zucchini
- 1/2 cup diced onion
- 1 clove garlic, mashed
- 1 t. ground cumin
- 1/2 t. ground black pepper
- 1 cup of fresh or canned cut up tomatoes
- 1 cup rice
- 2 cups broth or water
Directions

Prep rice by bringing water or broth to a soft boil; add the rice and cook for 15 minutes.

2 Cut squash into 1" squares.

Mash the garlic and combine with cumin, black pepper, and tomatoes.

Add olive oil to a 10" skillet and saute the onion until soft and then add the squash. Add the salt and pepper and stir-fry for about 5 minutes.

(If using meat, brown the meat and add to the squash mixture.)

4 Add the tomato mixture and cook for about 10 or 15 minutes.

Serve over rice.
