Chicken Salad with Grapes, Apples and Fresh Dill

A note about the seasoning you use if you have to roast or grill the chicken. Make sure your spices or marinate does not have MSG. Primal Kitchen carries some really good marinates

Ingredients

  • 2 cups cooked chicken grilled or roasted
  • 1 cup seedless red grapes, each cut in hal
  • 1 small Gala apple, finely diced
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped green onions
  • 1/2 to 1 cup mayonnaise, primal kitchen
  • 1 T. apple cider vinegar
  • Juice of 1 lime (1 to 2 tablespoons)
  • 1 teaspoon chopped fresh dill
  • Salt and pepper to taste

Directions

  1. SKIP THIS STEP IF YOU HAVE LEFTOVER CHICKEN. If not follow these steps: Season the chicken with salt and pepper. Prepare grill. Grill chicken until done.

  2. If roasting:Marinated chicken with favorite spices and roast on 375 F for about an hour

  3. In large bowl, stir together all ingredients until well mixed, adding salt and pepper to taste.

  4. Serve over mixed greens or make a sandwich.
