GAPS Chicken Salad with Grapes, Cashews Apples and Fresh Dill

Ingredients

  • 2 cups cooked chicken legs, breast, thighs, grilled or roasted
  • 1 cup seedless red grapes, each cut in half
  • 1 cup organic cashews
  • 1 small Gala apple, finely diced
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped green onions
  • 1/2 to 1 cup mayonnaise
  • 1 T. apple cider vinegar
  • Juice of 1 lime (1 to 2 tablespoons)
  • 1 teaspoon chopped fresh dill
  • Salt and pepper to taste

Directions

  1. Season the chicken with salt and pepper. Prepare grill. Grill chicken until done.

  2. Marinated chicken with favorite spices and roast on 375 F for about an hours

  3. In large bowl, stir together all ingredients until well mixed, adding salt and pepper to taste.

  4. Serve over mixed greens or make a sandwich.
