Ingredients
- 1 pkg (16 oz) lentils
- 19 cups water
- 1 onion, chopped
- 1/2 cup cooked rice
- 2 tsp salt
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried parsley
- 3 large tomatoes, chopped
- 1 large carrot, chopped
- 1 pkg (10 oz) chopped frozen spinach, thawed, drained
Directions

- Wash and drain lentils.

- Combine lentils, water, onion, rice, salt, garlic, oregano and parsley in a large pot and bring to a boil.

- Cover and simmer for 25 minutes.

*Add tomatoes, carrot and spinach.

*Simmer 20 minutes more or until lentils are tender.
