Caribbean Ginger Chicken

Serves 4 peopleIngredients
- Juice and zest of one key lime, or 1 Tbs key lime juice
- Juice of 1 Florida orange
- 1 Tbs honey
- 2 Tbs grated fresh ginger
- 4 cloves garlic, minced
- 1/2 tsp cinnamon
- 1 tsp pepper sauce or ground fresh pepper
- 4 (4 oz) skinless, boneless chicken breasts
- Pam vegetable spray
- 1 (8 oz) can tomatoes, crushed w/ juices
- Salt & pepper
- Garnish: mandarin oranges
Directions

*Combine the lime juice, orange juice, and honey. Add ginger, garlic, cinnamon and pepper sauce.

*Add marinade to chicken pieces and rub well. Cover and refrigerate for two hours.

*Heat the Pam in a large saute pan. Add the chicken pieces, one at a time, reserving the marinade, and brown on each side.

*Pour on reserved marinade, add the tomatoes and lime zest.

*Season with salt and pepper.

*Cover and simmer until cooked, about 20 minutes, turning occasionally.

*Remove the chicken pieces, increase the heat and reduce juices to a nicely thickened sauce. Pour over chicken and serve.

*Garnish with mandarin orange sections.
