Carrot Soup

Ingredients
- Carrots, 5-6 thinly sliced
- Celery, 1-2 stalks thinly sliced
- Onion, 1 medium thinly sliced
- Salt
- Thyme
- Butter (optional) 2 Tbsp
- Pepper to taste
- Broth - enough to cover everything in crock pot
- 1/4 cup rice
Directions

Put everything in crockpot except butter.

Cook on low 6 to 8 hours.

Put mixture in blender and blend until smooth.

Salt and pepper to taste.

Stir in butter at end (optional).

May serve with sour cream on each serving.
