Ingredients
- 2/4 cup frozen shelled edamame, thawed and patted dry
- 1 medium tomato, diced
- 1/2 medium cucumber, peeled and diced
- 1/2-1 medium fresh jalapeno, seeds and ribs discarded, finely chopped
- 1/4 cup finely chopped red onion
- 2 Tbsp snipped fresh mint
- 2 tsp grated lemon zest
- 2 Tbsp lemon juice
- 2 tsp EVOO
- 1/8 tsp salt
- CAN ADD- corn, red peppers, avocado, etc.
- OR
- 11/2 cups frozen shelled edamame beans, thawed
- 1/2 medium red bell pepper, diced (1/2 cup)
- 1/4 cup diced purple onion
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
