Ingredients
- 2 quarts water
- 8 oz chopped kale, stems discarded
- 1 tsp olive oil
- 1/4 cup sweetened dried cranberries
- 2 Tbsp balsamic vinegar
- 1 tsp bottled minced garlic or 2 medium garlic cloves, minced
- 1/8 tsp salt
- 2 tbsp fresh orange juice
- 1 tsp grated orange zest

Bring water to a boil

Cook the kale, uncovered for 8 minutes

Drain under cold water

In large skilled, heat oil to coat bottom

Cook kale, cranberries, vinegar, garlic and salt for 2-3 minutes

Stir in orange juice and zest
