Thai Style Eggplant with Coconut Sauce

Ingredients
- 1 large eggplant
- 1 Tbs minced garlic
- 2 Tbs soy sauce
- 8 Tbs cilantro, divided
- Juice of 1 lime
- 1 can coconut milk
- 1 jalapeƱo, minced (optional)
- 1 Tbs grated fresh ginger
- 3 Tbs peanut butter
- 3 Tbs brown sugar
Directions

Cut the eggplant into 1/2 inch strips, lengthwise. Score each side of the eggplant pieces in a criss cross pattern. Rub the garlic and soy sauce into the scored eggplant. Grill or broil until brown and pliable.

Mix together the sauce, using half the cilantro.
