Arugula & Feta with Strawberry Vinaigrette

Great way to use arugula

Serves 6 people

Ingredients

  • 2 cups strawberries, divided
  • 1 green onion, trimmed
  • 1 small garlic clove, minced
  • 2 T. seasoned rice vinegar
  • 2 T. extra-virgin olive oil
  • 1 T. chopped fresh tarragon or 1 t. dried
  • 1/2 t. whole-grain mustard
  • 1/2 t. salt
  • 1 t. agave nectar
  • 10 cups arugula, trimmed
  • 3/4 cup crumbled feta cheese

Directions

  1. Puree 4 strawberries and onion in a food processor or blender until chopped. Add garlic, vinegar, oil, tarragon, mustard, salt and pepper. Pulse until well combined.

  2. Combine arugula and feta. Slice the remainder of the strawberries. Toss salad with dressing
