Pasta with Arugula Pesto

Easy, good, and healthy!
Prep time: 10 minutes
Cook time: 15 minutes
Serves 5 people
Ingredients
- 8 oz of pasta of your choice
- 1/4 to 1/2 cup arugula pesto
- Parmesan for topping
- PESTO
- 2 cups packed arugula
- 1/2 cup extra-virgin olive oil
- 1 cup finely grated Parmesan
- 1/3 cup walnuts or pine nuts
- 1 tbsp. lemon zest
- 1 clove garlic, chopped
- Kosher salt and freshly ground black pepper, to taste
Directions

Cook the pasta in a pot of boiling water until done, 15 minutes or so. Drain the pasta and put back into pot; add the pesto and stir well. Serve with Parmesan cheese.

Add as much pesto to your pasta as desired.

Serve with hot sourdough bread and a salad.
