Vegetarian Carbonara

Delicious served with garlic bread and salad with balsamic dressing, great for children too.

Cook time: 15 minutes
Serves 2 people

Ingredients

  • 1 cloves of garlic
  • 4 veggie bacon slices, rashers
  • 400ml tin coconut milk
  • 2 tbsp nutritional yeast flakes
  • 150g tagliatelle
  • creamed coconut
  • vegan cheese, grated

Directions

  1. Fry the garlic in a knob of butter or olive oil for 2 mins.

  2. Add the diced rashers and stir, then add the coconut milk and yeast flakes. Season to taste and simmer for 10 mins. Add creamed coconut as desired to get the texture for your liking.

  3. Meanwhile cook the tagliatelle in boiling water according to the instructions on the packet.

  4. Pile the tagliatelle onto plates and top with the carbonara, garnish with cheese.
