Ingredients
- 2 medium Yukon gold organic potatoes, scrubbed & grated coarsely
- 2 Tbs flour
- 1/2 tsp baking powder
- 1 medium onion, grated
- 1 tsp salt
- 1/2 cup egg substitute or 1 whole egg plus 1 egg white
- Olive oil spray
Directions

Preheat the oven to 450 degrees and place a large baking sheet in it. Grate potatoes and onion, place in a colander and squeeze as much liquid as possible. Transfer to a bowl and mix in the rest of the ingredients. Pull the heated baking sheet out of the oven. Spray baking sheet with olive oil, spoon small mounds with a teaspoon and place on sheet, leaving an inch between. Flatten with the back of a teaspoon. Bake-fry until bottoms are golden-brown, about 10 minutes. Spray tops of latkes with oil and turn them. Cook until flipped tops are golden-brown, too.

Serve with low fat sour cream or apple sauce.
