Yoghurt Sauce

Ingredients

  • 1 clove garlic, peeled
  • 1/2 tsp kosher salt
  • 2 Tbs chopped mint or parsely
  • 1/4 cup EVOO
  • Juice of 1/2 large lemon
  • 1 cup whole milk yoghurt
  • 1/2 cup chopped walnuts (optional)

Directions

  1. Pound the salt and garlic into a paste using a Tablespoon (or a mortar & pestle). Add the chopped herbs, the olive oil and the lemon juice, and mix. Just before serving, mix in the yoghurt and optional walnuts, correct seasoning with salt and lemon (the flavors should be bright and strong), serve.
