Mediterranean Lentil Salad

Serves 4 people

Ingredients

  • 4 cups water
  • 1 cup dried lentils
  • 1 diced carrot
  • 1/2 cup chopped greens
  • 2-3 cloves chopped garlic
  • 4 coarsely chopped tomatoes
  • 4 ounces feta cheese
  • 1 cup sliced green onions
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper

Directions

  1. Combine 4 cups water, lentils, carrots, greens and garlic in a large saucepan; bring to a boil. Partially cover, reduce heat, and simmer 15 mins or until lentils are crisp-tender. Drain.

  2. Combine lentils with remaining ingredients in a bowl; toss gently. Serve warm, or cover and chill.
