Mediterranean Lentil Salad

Serves 4 people
Ingredients
- 4 cups water
- 1 cup dried lentils
- 1 diced carrot
- 1/2 cup chopped greens
- 2-3 cloves chopped garlic
- 4 coarsely chopped tomatoes
- 4 ounces feta cheese
- 1 cup sliced green onions
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
Directions

Combine 4 cups water, lentils, carrots, greens and garlic in a large saucepan; bring to a boil. Partially cover, reduce heat, and simmer 15 mins or until lentils are crisp-tender. Drain.

Combine lentils with remaining ingredients in a bowl; toss gently. Serve warm, or cover and chill.
