Roasted Mixed Veggies

Cook time: 20 minutes
Serves 4 people
Ingredients
- 1 thinly sliced red bell pepper or banana peppers
- 1/2 vertically sliced onion
- 1 bunch asparagus
- 2 or 3 carrots
- 1 bunch green beans
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon chopped fresh dill separated
Directions

Preheat oven to 450F

Combine all ingredients on a large baking pan (leaving 1/2 tablespoon of dill for garnish at end); toss gently to coat.

Bake at 450F for 20 minutes or until veggies are tender. Sprinkle with dill.
