Mulligatawny Soup

Ingredients
- 1 oz unsalted butter
- 12 oz Mirepoix (50% onion, 25% carrot, 25% celery, chopped)
- 2T Flour
- 2t curry powder
- 1 Qt chicken stock
- 3.5 oz Chicken meat, cooked, diced
- 1 oz green apple, diced
- 1 oz mushroom, sliced
- 4 fl oz Milk, warm
- Salt & Pepper to taste
- Fresh Chives (for garnish)
Directions

In a saucepot, heat the butter over medium heat; add the mirepoix and sauté for 5 minutes.

Add the flour and curry powder and cook to form a blond roux.

Add the stock. Bring to a simmer and cook for 15 minutes.

Add the chicken, apple and mushroom and cook for 15 more minutes.

Finish with the milk and season with salt & white pepper. Garnish with fresh chives.
