Spicy tomato and bean soup

Ingredients

  • 400g beans
  • 1 onion chopped
  • 3 celery chopped
  • 1 carlic clove chopped
  • 2 tsp dried herbs
  • 400g chopped toms/pasata
  • 600ml stock
  • 1 tsp dried chili
  • optional - cucumber

Directions

  1. Fry chopped veg till soft

  2. Add garlic

  3. Cook in stock pot with all other ingredients except beans

  4. Simmer for 25-30 minutes till veg is soft

  5. Blend till smooth (or chunky if preferred)

  6. Add beans and cook in soup till soft
