Gluten-Free Cornbread

Serves 8 people
Ingredients
- 2 Tbs. butter
- 1 cup stone-ground cornmeal
- 1 cup gluten-free flour, Red Bob's Mill
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1 teaspoon xanthan gum
- 2 eggs
- 1/4 cup butter or lard
- 1 cup milk ( I mix 1/2 cup yogurt with 1/2 cup water)

Preheat over to 425

Put butter in an iron skillet or square baking pan and set in oven while it is heating. Combine flours, salt, xanthum gum, baking powder and mix.

In another bowl, mix the wet ingredients. AS SOON AS THE OVEN GETS HOT REMOVE THE SKILLET, and brush the melted butter around the skillet or baking pan and cover well. Pour any excess into the wet ingredients.

Quickly mix wet and dry ingredients together and pour into buttered skillet or pan. Bake in the middle of the oven until golden brown, about 15-20 minutes.
