German-Style Roasted Natural Chicken

Ingredients
- 1/4 tsp. Canola Oil
- 1/4 medium onion, sliced
- 1 c. purple cabbage, shredded
- 1/4 apple, cored, peeled, shredded
- 1/2 tbsp. Maple Syrup
- 1/2 tsp. thyme
- 1/2 tsp. celery seed
- sea salt
- pepper
- 1/4 c. Apple Juice
- 2 tsp. apple cider vinegar
- 1 (6 oz.) boneless, skinless natural chicken breasts
Directions

Preheat oven to 350°F.

Heat oil in large sauté pan over medium high heat.

Add onion, cook for 2 minutes until soft.

Add cabbage, apples, syrup, spices, salt and pepper.

Add cider and vinegar.

Cook for 5 minutes.

Spoon cabbage mixture in a baking dish.

Heat same pan over high heat.

Sear chicken on both sides.

Place on cabbage and bake for 30 minutes.
