Chorizo Egg Tostadas w/Avocado salsa

Ingredients

  • 1/2 lb chorizo
  • 1 tablespoon beef tallow or butter
  • 6 EGGS
  • 1/2 onion
  • 1 cup cilantro, chopped
  • 12 tostadas
  • avocado, sliced

Directions

  1. Cook chorizo and onion until lightly brown: Add beef tallow or butter; and add eggs. Stir until eggs are soft cook, remove from burner

  2. Heat the tostadas: top with egg mixture and chopped cilantro and avocado
