GAPS Greek Salad

Ingredients

- 1 head romaine
- 2 English cucumbers
- 1/2 thinly sliced red onion
- 1/2 cup grape tomatoes
- 2 peppers, diced
- pitted black olives
- cubed feta cheese
- For Dressing
- 2 Tablespoons Crushed garlic
- 1/2 cup red wine vinegar
- 1/4 cup cold water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon dry mustard
- 2 teaspoons sugar
- 1 teaspoon paprika
- 1/4 cup olive oil. can add more olive oil if too vinegary

Combine all salad ingredients

Mix dressing ingredients and shake well. Allow dressing to marinate at least 30 minutes in the fridge.

When ready pour as much dressing as desired and mix well.
