GLUTEN-FREE SINGLE PIE CRUST

Ingredients
- 3 TABLESPOON ICE WATER
- 1 1/2 TABLESPOONS SOUR CREAM
- 1 -1/2 TABLESPOONS RICE VINEGAR
- 3/4 CUP PLUS 2/3 CUPS GLUTEN-FREE ATK FLOUR BLEND
- 1-1/2 TEASPOONS SUGAR
- 1/2 TEASPOON SALT
- 1/3 TEASPOON XANTHAN GUM
- 8 TABLESPOON BUTTER

Cut in cold butter into small cubes and put in fridge to keep cold. Combine cold water, sour cream, and rice vinegar together in a bowl.

Combine the flour, sugar, salt, xanthan gum in a blender and mix well. Add the cold butter and mix for about 5 seconds to allow it to come together

Add half the sour cream mixture and process for a few seconds, add the rest and process for a few seconds until mixture comes together.

Bring dough together gently and press it into flat and wrap it tightly and chill
