GLUTEN-FREE SINGLE PIE CRUST

Ingredients

  • 3 TABLESPOON ICE WATER
  • 1 1/2 TABLESPOONS SOUR CREAM
  • 1 -1/2 TABLESPOONS RICE VINEGAR
  • 3/4 CUP PLUS 2/3 CUPS GLUTEN-FREE ATK FLOUR BLEND
  • 1-1/2 TEASPOONS SUGAR
  • 1/2 TEASPOON SALT
  • 1/3 TEASPOON XANTHAN GUM
  • 8 TABLESPOON BUTTER

Directions

  1. Cut in cold butter into small cubes and put in fridge to keep cold. Combine cold water, sour cream, and rice vinegar together in a bowl.

  2. Combine the flour, sugar, salt, xanthan gum in a blender and mix well. Add the cold butter and mix for about 5 seconds to allow it to come together

  3. Add half the sour cream mixture and process for a few seconds, add the rest and process for a few seconds until mixture comes together.

  4. Bring dough together gently and press it into flat and wrap it tightly and chill
