Ingredients
- - 3 tablespoons Mick's Red Pepper Jelly
- - 1 tablespoon cider or raspberry vinegar
- - � teaspoon kosher salt
- - 6 large kiwi, peeled and diced � -inch (about 1 � to 2 cups)
- - � cup minced red pepper
- - � cup minced red onion
- - � cup coarsely chopped cilantro
Directions

In a small bowl, stir together the jelly, vinegar and salt until well-combined. Add the remaining ingredients and toss gently until well-combined. Serve immediately.

Chef’s note: Great as a unique salsa to serve with corn chips or jumbo prawns for an appetizer. Or, top grilled chicken, pork chops or fish.
